Vaniyambadi

Vaniyambadi has a mild, gentle heat which will appeal to curry enthusiasts of all ages. It contains fresh red and green chillies, onion, ginger, garlic, coriander, mint, tomato, vegetable oil, cinnamon, cardamom, lime juice, salt and nothing else.

The joy of these sauces is that you can create a family feast within a matter of minutes. . Here are a few of our favourite family recipe ideas – but you can experiment and create anything you choose:

Each pot of sauce serves four people (and has a 10 week refrigerated shelf-life). Your meal only takes approx. 20 minutes to prepare following these simple instructions –

From Fridge to Feast in 15 minutes! 

• Chicken Thighs or Chicken Breast
• Prawns & Spinach with Coconut Milk
• Chickpeas & Spinach
• Sweet Potato & Butternut Squash
• Salmon• Monkfish• Lamb

  • Pour the sauce into a large pan and add up to 500g meat, fish or vegetables
  • Simmer gently until the meat, fish, vegetables are cooked through and tender
  • During cooking add small amounts of water up to 150 ml to prevent drying
  • Optional but before serving add some Greek-style or coconut yogurt or coconut milk to adjust heat or thicken the sauce to your taste
  • Garnish with coriander and serve with rice or naans
